A few little tips when cooking... When Garlic is crushed, chopped or chewed, the enzyme Allicin is released. This enzyme holds a host of healthful benefits, but can be blocked if microwaved for more than 1 minute, or cooked for more than 6 minutes.
Once chopped or crushed, leave to stand for 10 minutes and add to the cooking for a maximum of 6 minutes before serving.
